Post-Industrial City and Bifurcation of Labor:
The Case of New York City Restaurant Industry

Abstract
This paper looks at the composition of labor force in the restaurant industry in New York City. The expansion of the restaurant industry in NYC coincides with the changes in the urban form in the post-industrial social order. One of the more prominent features of post-industrial economy is the polarization of labor between high-end and low-end service occupations. In this paper, I explore another type of bifurcation that takes place in the restaurant kitchens. Work at restaurants has a peculiar character as it appeals to different class and ethnic groups. This paper aims to uncover the features of restaurant work.
